BUTTER CAKE
Hello chef friends, so guys, on this blog I will explain the practical results that my friends and I got in the DRK course on Thursday, October 20 2022, namely the practice of making butter cake. Give me the presentation.
Definition of Butter Cake:
Butter Cake is a type of cake with a dense texture so it dries easily at room temperature. The ingredients for making Butter Cake are not much different from Sponge Cake, it's just that for making Butter Cake, you need more margarine or butter than Sponge Cake.
· Butter Cake Recipe:
- Butter 180 gr
- Milk 225 gr
- Sugar (the grain is rather fine) 195 gr
- Salt 2 gr
- Eggs 113 gr
- Cake flour (Soft flour) 225 gr
- Baking powder 9 gr
- Vanilla 4 gr
Steps to Make Butter Cake:
1) Soften the butter if it's a bit hard/from the chiller in the mixer bowl. Then mix.
2) Then add sugar. Keep the speed high, until the butter and sugar are combined.
3) After blending, increase the mixer speed until the texture is creamy (medium speed).
4) After it starts to get creamy, the mixer speed is changed to full speed, and the color changes to white/stiff and the sugar dissolves, the texture becomes stiff, then turn off the mixer.
5) Combine dry ingredients except salt, then mix in butter and sugar mixture.
6) Lower the speed, then add the vanilla essence, then mix again.
7) After that, add salt and mix again.
8) Then, add the eggs little by little while stirring until smooth (Beat the eggs first).
9) Add flour 3x while stirring interspersed with pouring milk into the mixer bowl, until everything is used up step by step.
10) Make sure all ingredients are well mixed.
11) After that, turn off the mixer, then pour the mixture into the pan.
12) Then bake at 190oC for 20 minutes or until the butter cake is perfectly cooked.
13) Once cooked, remove the butter cake from the oven, then transfer it to a cooling rack.
