 HOLLANDAISE SAUCE

Hello chef friends, now it's still about sauce, guys.
So guys, we have entered theory week but our course is good in practice guys, so today, September 27, 2022, we are still doing something about sauce, namely, Hollandaise sauce.
A little explanation about this Hollandaise sauce, this Hollandaise sauce itself is almost similar to Mayonnaise sauce, guys, but in terms of ingredients it is different, this Hollandaise sauce is usually used in processed egg foods, such as boiled eggs, scramble eggs, poch eggs, etc.

The ingredients of this Hollandaise sauce are,
- butter solution
-egg
-acid products
 -vinegar
 -pepper seeds
-salt and pepper
Now the steps for making this Hollandaise itself
  1. Whisk the egg until it thickens a bit, using the bain marie.
  2. After it thickens a bit, gradually lower the butter solution at 42-43°c
  3. Shake using 1 direction so that the butter solution is evenly mixed
  4. After the butter runs out and has thickened
  5. Add the product's acid and salt and pepper to taste
  6. Then shake until the acid product and salt and pepper are evenly distributed and it becomes Hollandaise sauce
