SPONGE CAKE
Hello chef friends, so aguys. On this blog, I will explain the results of my and my friends' practice in the DRK course on Wednesday, October 19, 2022, namely making sponge cake.
Here's the presentation:
· Definition of sponge cake:
Sponge cake is a cake known as sponge cake or foam cake because it has a chewy and light texture. Sponge cake is made by mixing eggs and sugar until fluffy, then adding flour and melted margarine.
Sponge cake recipe:
- Egg 150 gr (Approximately 3 pcs)
- Sugar 100 gr
- Soft flour 100 gr
- Butter (melted) 32 gr
- Vanilla (optional) 2 gr
Steps to make sponge cake:
1) Mixer egg + sugar for 1-2 minutes on high speed.
2) After 3 minutes, it becomes speed 2. Then it increases to speed 4, and then increases again to speed 6-8.
3) After the egg + sugar mixture changes color to white / stiff / the texture is rather stiff.
4) After that, add the soft flour little by little while stirring.
5) And when it's well mixed, add the butter.
6) Then stir again until smooth. You can also add vanilla essence (optional).
7) After that, put the dough into the pan.
8) Then bake for 20 minutes at 180oC – 190oC until cooked.
9) Once cooked, remove the cake from the oven, then transfer it to a cooling rack.
